Think of an equalizer showcasing various parts of the coffee\/processing and in this case highs vs. mids. In my brief tasting with the folks at Tanat, we found a split between what we all liked. I personally like the Waved version because I love vibrant acidity but I know many of you would prefer the Non-Waved version for this specific coffee. I think more testing is required on various types of coffees, processing, etc. to see what the machine really does but it is interesting to see this type of device exist. Overall, this is a fascinating direction that we're starting to see producers and competitors head in and I'd love to know what you guys think about the taste of the coffee.
